Civerinos has become a household name in the Scottish capital, but their latest venture on Raeburn Place represents a distinct evolution of the brand. While their Forest Road and Portobello sites are pillars of the late-night student and local beach-side scenes, this Stockbridge outpost enters one of the city’s most competitive foodie enclaves. Situated in a neighbourhood where independent delis and high-end bistros are the norm, Civerinos is attempting to stake a claim as the local heavyweight of pizza, standing its ground against the surrounding big franchise giants.

A Tale of Three Pizzas

The Stockbridge menu is a departure from the standard thin-crust experience found elsewhere in the chain. It focuses on three specific American regional styles: New York, New Haven, and Detroit. The New York style is perhaps the most familiar, offering the classic large, foldable slice with a thin, crispy-yet-pliable crust. It ranges from individual slices to massive 20-inch pies.

The New Haven style, traditionally known as “apizza”, is served here as a “Square” by the tray. It is characterised by a longer fermentation and a high-heat char, resulting in a chewier, more robust base. Finally, the Detroit style offers a thick, airy rectangular crust with a “frico” edgeβ€”cheese that has melted down the sides of the pan to create a crispy, caramelised perimeter. This variety makes the venue a technical showcase for pizza enthusiasts, though the specialised nature means prices for full pies often sit between Β£24 and Β£26.

The Logistics of Popularity

Success brings its own set of challenges, and Civerinos Stockbridge frequently grapples with its own popularity. Queues are a common sight on Raeburn Place, acting as both a visual endorsement and a potential barrier. There have been instances of “queue crises” where patrons have waited significant periods only to be met with further delays. However, for the solo diner, the experience is often much smoother. Getting seated quickly and being served competently is the standard for those not encumbered by large groups.

The interior design utilises a vertical approach to dining. To save space on the compact tables, pizzas are served on elevated tins. This creates a three-dimensional dining area, allowing room for cutlery or drinks underneath the main event. While practical for sharing, the bustling, sometimes crowded atmosphere means the occasional glass has been known to meet the floor. Despite the tight quarters and the high-energy pace, the staff maintain a friendly and professional demeanour.

Stockbridge is one of the most picturesque areas of Edinburgh, offering a village feel within walking distance of the City Centre. Visitors can explore the famous Stockbridge Market on Sundays or take a scenic walk along the Water of Leith walkway toward Dean Village. The Royal Botanic Garden Edinburgh is a short stroll away, providing a tranquil escape from the urban bustle.

For those visiting from further afield, the area is well-served by Lothian Buses (routes 24, 29, and 42). While there are few large hotels in the immediate vicinity, high-end serviced apartments and boutique guesthouses are plentiful. Civerinos Stockbridge is a different beast compared to its siblings. It trades the “party slice” reputation for a more serious, technique-driven menu that rewards exploration of different regional styles. While the potential for service delays and the premium pricing for full trays might give some pause, the quality of the New York slices and the unique Detroit crusts make it a valuable addition to the Raeburn Place circuit. It is a bold, specialised success story that holds its own in a fierce market.
